Get "Fraps (2.81)", press your F9 key after starting the application and replay your fight etc etc. You can then use (export) Windows Movie Maker or Sony Vegas to edit the file and add text, visuals (effects) or anything you like.

I've never uploaded anything to a video streaming site but I assume it's just a matter of pointing to your file and hitting the upload button.

I'd like to see some guys do these vids, they are good for advertisement purposes aswell as being entertaining.
